Born from Passion,

AURUM was conceived in a moment of quiet clarity — Chef Alexandre Moreau, then at the height of his career in Paris, stood in a Geneva marketplace surrounded by the finest produce he had ever encountered: Valais saffron, Lake Geneva perch, Jura black truffles, and Alpine cheeses aged in centuries-old caves.

He returned to Paris, resigned the next morning, and began building AURUM from a single obsession: that the world's finest dining experience should be found not in London, not in Tokyo, not in New York — but here, in Geneva, where the world's rarest ingredients converge.

AURUM opened its doors in March 2019 to a waitlist of 4,000 names. Within eleven months, it held three diamond rating. By 2022, it was named the #7 restaurant in the world.

Born in Lyon in 1980, Alexandre Moreau grew up in his grandmother's kitchen learning that food is memory — and memory is life. He trained under Alain Ducasse at Le Louis XV, spent three years in Kyoto studying Japanese precision, and two years in Copenhagen embracing Nordic minimalism.

He returned to Europe with a singular philosophy: ingredients first, technique second, story always. His cuisine defies categorisation. It is simultaneously French in its reverence for produce, Japanese in its restraint, and completely, unmistakably his own.

Ingredient Sovereignty

We source less than forty primary ingredients per season. Each is the finest of its kind anywhere on earth. Our foragers travel six continents. We settle for nothing second-best.

Invisible Technique

Great technique should be felt, never seen. Every method — from 72-hour braises to liquid nitrogen crystallisation — exists only to serve the ingredient, never to impress the eye.

Memory Architecture

Each dish is designed to trigger a memory — or create one. We collaborate with neuroscientists and perfumers to engineer experiences that guests recall decades later.

Six Years of Milestones

2019

Opening Night

AURUM opens with 40 covers and a three-month waiting list. The Financial Times calls it "the most anticipated restaurant opening in a decade."

2020

Three Diamond Rating

AURUM receives three diamond rating in its first full year — one of only six restaurants globally to achieve this in under twelve months of operation.

2021

The Private Cellar Opens

The 18th-century wine cellar beneath the restaurant is restored and opened for intimate private dining. Capacity: 8 guests. Waitlist: 18 months.

2022

Global Dining 100 #7

AURUM enters the Global Dining 100 list at #7, making it the highest new entry since 2014. Chef Moreau is named Chef of the Year by Swiss Culinary Society.

2025

The Future

AURUM continues its pursuit of the extraordinary. A new rooftop terrace opens in summer 2025, offering Alpine panoramic dining under open skies.
